Churned in small batches at a storefront that opens only in the evening and posts no menu, from a base the proprietor calls her own blend and the regulars have stopped asking about. The candied topping is made in-house on a marble slab, turned with a thin wooden paddle that has a single name carved into the handle. Nobody has complained about the flavor in eleven years of operation, which the proprietor considers a manageable kind of reputation.
