Made by the same farms that keep a cow or two beyond what the household actually drinks, and pressed in cloths that never quite get clean between batches, because that is part of the flavor by the third turn of the year. Sold off the back of carts at roadside markets, cut with a knife that everybody recognizes even if they cannot remember whose it is. A wedge keeps a week on the road and considerably longer in the right cellar.
