Grilled Fish BurritoFood

Foil-wrapped cylinder the weight of a small brick, unwrapped to reveal a tortilla packed with grilled whitefish, yellow rice, black beans, and a line of salsa that runs the full length of the roll. First bite is warm and second is warmer, because the heat is coming from the center on a delay.

Chefs call it the Bite of Valor.

This recipe was developed by Fishfather Raul as a heavy-duty survival meal, packed with nutrients and flavor. Originally served only during post-storm rebuilds.

“He once fed a whole rebel squad with three of these and a melted soda. They punched a tank.”

Chronicle

Lore

Built at a walk-up window on the east pier by a cook who has refused expansion offers from three separate restaurant groups, on the straightforward grounds that the line would get longer and he does not care to see further down it. The fish is caught the same morning, cleaned in a back room nobody is shown, and grilled over a pan whose seasoning has never been stripped since the stall opened. Locals eat standing; visitors sit down, and regret it.
