Delivered before dawn by a cooperative of dairymen who still run the lower routes on foot, on the theory that anybody who oversleeps loses their spot in the order. The milk is pooled from three or four farms at the sorting-shed and only rarely from one, which is why the flavor shifts a little week to week and nobody respectable complains about it. A bottle kept cool in a shaded cellar will last the better part of two days, which is the longest anyone in the household is willing to wait for their tea.
