Blended in the back of the cooperative kitchen on the harbor road, from squid ink that arrives in sealed jars and deep-salt crystals the supplier insists are mined rather than evaporated. The emulsifiers are proprietary, meaning the two cooks who share the recipe also share a deadlock on whether to ever write it down. Served once a week, by reservation, and the regulars have learned to wear black to dinner as a matter of practical respect.
