Can mobs open this door on their own?

Yes. Villagers and piglins can open copper doors just like wooden doors, and it can also be toggled by redstone signals.

Will it change color over time?

No. The honeycomb wax coating permanently locks it at the exposed stage, preventing further oxidation.

Can I remove the wax to let it oxidize again?

No block can un-wax directly with an axe in reverse; an axe on a waxed copper door only scrapes wax off unwaxed copper of matching stage, it does not exist as a separate "unwax" action here since it is already waxed at this stage.
