Can I edit the text on an Oak Sign after placing it?

The front text locks once written unless glazed with a honeycomb, but the back side of the sign can still be edited separately.

No. Signs are non-solid, so items, projectiles, and mobs can pass through them, though they still block fluid flow.

Does an Oak Sign burn?

Yes. Overworld wood signs are flammable, unlike crimson and warped signs which are fireproof.
