Any pickaxe, but at least a wooden pickaxe — mining it by hand or with the wrong tool yields no drop.

Does granite drop itself when mined?

Yes. Granite always drops itself, with or without Silk Touch, since it has no separate "ore" form.

Mostly building and decoration — it crafts into polished granite, slabs, stairs, and walls, and can be traded to mason villagers for emeralds.

Is granite renewable?
